Abstract
A simple process was standardized to obtain about 80% clear, white edible-g rade product from mould-infested and discoloured sorghum grains. The discol oured grains were suspended in 40% NaCl (sp.gr. 1.25) to separate heavily i nfested and light weight grains. The sinkers were dried and pearled on an a brasive polisher at 650 rpm for 5 min. The pearling treatment removed compl etely the surface discoloration and aflatoxins, while lowering the contents of fibre by 15.6% and polyphenols by 20.6%. The pan breads from meal of di scoloured grains were unacceptable, while those prepared from pearled produ ct were found acceptable.
