Abstract
Edible grade meal was prepared from dehulled and defatted sunflower seed ke rnels and analyzed for proximate principles, polyphenols and phytate and it s nitrogen extractability was studied at different variables. The kernels c ontained 19.8% proteins, 50.1% fat, 3.7% ash, 1.6% polyphenols and 1.7% phy tate on dry weight basis. Dehulling kernels increased relative concentratio ns of these components on unit weight basis. A solid : liquid ratio of 1:20 and extraction time of 30 min were found to be the most optimum nitrogen s olubilizing parameters. Addition of sodium chloride increased the nitrogen extractability in isoelectric pH range.
