Abstract
4-Hydroxy-2,5-dimethyl-3(2H)-furanone (HDMF) was detected in simple media p repared with heated sugar and amino acid solution as a result of the Mailla rd reaction. However, an increase in the amount of HDMF was observed in the media fermented by Lactococcus lactis subsp. cremoris IFO 3427. 4-Hydroxy- 2(or 5)-ethyl-5(or 2)-methyl-3(2H)-furanone (HEMF) was not detected in all the simple media examined in this study.
