Abstract
Internationalisation is a widely recognised process by which people and ide as transfer from one part of the world to another. This article shows how a n idea and a group of people have moved and become part of another society. Turkish migrants to Berlin have become established in the restaurant indus try by bringing with them their own culinary specialities, in this case the kebab. The case study points to the much wider issue of the significance o f ethnic niches within the labour markets of European cities.
