Abstract
Fungi have been important in both ancient and modern biotechnological proce sses. Processes and products that utilize fungi include baking, brewing, an d the production of antibiotics, alcohols, enzymes, organic acids, and nume rous pharmaceuticals. The advent of recombinant DNA technology and large sc ale genomics analysis has placed yeasts and filamentous fungi in the forefr ont of contemporary commercial applications. The term 'mycotechnology' is i ntroduced here to describe the enormous impact of fungi on biotechnology. ( C) 1998 Elsevier Science B.V. All rights reserved.
